How to find good chilaquiles
Chilaquiles are tortilla chips simmered briefly in red or green salsa, topped with crema, cheese, onion and often eggs or chicken. They are the classic Mexican breakfast, and timing makes them.
What separates a good one from a bad one
- Freshly fried tortillas — Made from day-old tortillas fried in-house, not bagged chips.
- Just soft enough — Some like them crunchy, some soft. Either way the chips should hold some texture, not dissolve.
- Salsa with real flavour — Roasted tomato or tomatillo with chilli. Thin, flavourless salsa ruins the dish.
- Crema and queso fresco — Cool, tangy toppings.
- Eggs cooked to order — Fried or scrambled on top.
What to order
- Chilaquiles verdes — With fried eggs.
- Chilaquiles rojos — With chicken.
- Beans on the side — Refried.
- Café de olla — Spiced coffee.
- Divorciados — Half red, half green.
