How to find a good diner
A diner is not judged on its best dish. It is judged on whether a stranger can walk in alone at any hour, sit at the counter, and be fed quickly and without ceremony — and the places that do that well have usually been doing it for forty years.
What separates a good one from a bad one
- Regulars at the counter — People eating alone on a weekday morning who are clearly known. It is the strongest signal in this category and it cannot be manufactured.
- A seasoned flat-top — Decades of use changes how eggs and hash browns cook. The griddle is the diner's most important asset.
- Coffee refilled unasked — Not necessarily good coffee. The pot coming round is the operating standard.
- Hash browns or home fries done properly — Crisp outside, cooked through, seasoned. The component most often phoned in and the best single test.
- Open early, open late, open always — A diner that closes at 2pm on a Sunday is a café.
What to order
- Eggs, exactly how you want them — Over easy, over medium. If they arrive right, everything else will.
- A short stack alongside — Pancakes are the second test.
- Whatever is on the hand-written board — It is there because they have it today.
- A patty melt — Rye, griddled onions, American cheese. The diner sandwich.
- Pie, if the case is turning over — A full case at closing is not a good sign.
