How to find good New York-style pizza
New York pizza is a large, thin pie with a crust that is crisp underneath and pliable enough to fold, sold whole or by the slice. It is the most imitated pizza in America and the hardest to get right outside the city.

What separates a good one from a bad one
- Thin, foldable crust — Crisp on the bottom, chewy and flexible enough to fold lengthwise.
- Low-moisture mozzarella — Aged, low-moisture cheese that melts into an even layer and browns slightly.
- Simple, slightly sweet sauce — Uncooked or lightly cooked tomato with oregano.
- Reheated slices done right — In a slice joint, a slice goes back into the oven to crisp. Microwaved slices are a failure.
- Big pies — Eighteen inches is standard.
What to order
- A plain cheese slice — The benchmark.
- Pepperoni — Cup-and-char pepperoni, if they have it.
- A grandma slice — Square, thin, olive oil-rich.
- Sicilian — Thick square slice.
- Garlic knots — On the side.
