How to find good Peruvian food

Peru has three cuisines braided together — indigenous Andean, Spanish colonial, and a century of Japanese and Chinese immigration — and a good Peruvian restaurant will have all three on one menu without comment.

What separates a good one from a bad one

  • Ceviche cured to order — Fish, lime, salt, chilli, red onion. Fifteen minutes, not four hours. Ceviche that has been sitting is opaque and firm all the way through; fresh ceviche is still translucent at the centre.
  • Leche de tigre worth drinking — The citrus marinade left in the bowl. Good places sell it as a shot on its own, which tells you they consider it a product rather than a by-product.
  • Ají amarillo and ají panca, used properly — Peruvian chillies are fruity rather than punishing. If the heat is generic, the pastes are generic.
  • A rotisserie you can see — Pollo a la brasa is charcoal-roasted marinated chicken. A visible rotisserie with birds turning is the whole signal.
  • Chifa and Nikkei on the menu — Chinese-Peruvian and Japanese-Peruvian cooking are not fusion novelties here, they are century-old traditions. Their presence means a kitchen cooking real Peruvian food.

What to order

  • Ceviche mixto — Fish plus shellfish, with sweet potato and corn. The benchmark dish.
  • Lomo saltado — Beef stir-fried with onion, tomato and soy, served with fries and rice. Chifa influence in one plate.
  • Pollo a la brasa — With ají verde sauce. Order a quarter bird and the green sauce by the tub.
  • Ají de gallina — Shredded chicken in a creamy yellow chilli sauce. Mild and deeply savoury.
  • Anticuchos — Grilled beef heart skewers. Better than it sounds and a street-food staple.
