How to find good Portuguese food
Portuguese food in the US is concentrated in a few places — southeastern New England, New Jersey, California's Central Valley — and in those places it is excellent: grilled fish, salt cod, pork and clams, and custard tarts.

What separates a good one from a bad one
- Grilled fish done simply — Whole sardines or sea bream grilled over charcoal with olive oil and salt. Simplicity is the test.
- Bacalhau in several forms — Salt cod is the national obsession, with hundreds of preparations. A menu with several bacalhau dishes is a serious Portuguese kitchen.
- Piri-piri with real heat — Chicken grilled and basted with a hot, garlicky chilli sauce. It should be smoky and genuinely spicy.
- Pastéis de nata with a scorched top — Custard tarts with flaky, crisp pastry and a blistered, almost burnt top. Pale, soft ones are a different pastry.
- Portuguese bread and wine — Papo-secos rolls and a list with vinho verde and Douro reds.
What to order
- Grilled sardines — In season, with boiled potatoes and peppers.
- Bacalhau à Brás — Shredded salt cod with eggs, onion and straw potatoes.
- Carne de porco à alentejana — Pork and clams.
- Piri-piri chicken — Whole or half.
- Pastel de nata — With coffee.

How Savor Scout looks for it
The search reads for bacalhau, piri-piri, sardines and pastéis de nata, and for Portuguese rather than the much more common Brazilian, so the two cuisines do not get confused in results.
