How to find good shawarma
Shawarma is meat stacked on a vertical spit, roasted slowly, and shaved off in thin crisp-edged slices as the outside cooks. If the meat was not shaved off a turning spit in front of you, it is not shawarma — it is a meat wrap.
What separates a good one from a bad one
- A visible, turning spit with meat on it — Non-negotiable. A spit that is bare or not turning at lunchtime means the meat is coming from a pan.
- Shaved thin, with crisp edges — The exterior caramelises and is shaved off; the next layer cooks. Thick chunks mean it was carved in bulk earlier.
- A spit that looks hand-stacked — Layers of marinated meat and fat, uneven. A perfectly smooth cone is a commercial pre-formed cylinder.
- Toum or tahini made there — Lebanese garlic emulsion or a proper sesame sauce. Both are made fresh in good places and both are obvious when they are not.
- Bread warmed on the grill — Pita or saj bread heated in the meat fat. It makes the whole thing.
What to order
- Chicken shawarma with toum — The most common and the best test of the garlic sauce.
- Beef or lamb shawarma with tahini — Richer, and traditionally served with tahini rather than toum.
- A plate rather than a wrap — Meat, rice, salad, sauces. More food, easier to judge the meat.
- Pickles and turnips — The pink pickled turnip is not a garnish; it cuts the fat and belongs in the wrap.
- Ask when the spit went on — A reasonable question at a good place, and the answer tells you a lot.
