How to find good Turkish food
Turkish food is grilled meat and bread cooked in ovens hot enough to matter, plus a mezze tradition and a breakfast spread that is among the great meals anywhere. The bread is the tell: if it arrives hot and puffed, everything else is probably right.
What separates a good one from a bad one
- Bread from an oven on the premises — Pide bread, lavash or somun, arriving hot. This is the single most reliable indicator in Turkish cooking and it is obvious the moment it lands.
- Charcoal, not gas — Kebabs cooked over charcoal taste of charcoal. Places using it advertise it, and the difference is not subtle.
- Meat ground and seasoned in house — Adana and urfa kebab are hand-minced lamb pressed onto flat skewers. Machine-ground, pre-formed kebabs have a uniform texture that gives them away.
- A real mezze list — Haydari, ezme, muhammara, çiğ köfte, dolma. Depth here means a kitchen cooking a tradition rather than running a grill.
- Tea served properly — In tulip glasses, from a double teapot, refilled without asking. A small thing that correlates strongly.
What to order
- Adana kebab — Hand-minced spiced lamb on a flat skewer, over charcoal. The benchmark.
- Lahmacun — Thin flatbread with spiced minced lamb, rolled with lemon and parsley. Order two.
- Pide — Boat-shaped flatbread with cheese, egg or minced meat.
- Kahvaltı — The Turkish breakfast: cheeses, olives, tomato, cucumber, honey, clotted cream, eggs, endless bread and tea. Order it for two and clear your morning.
- İskender — Döner over bread with tomato sauce and yoghurt, finished with browned butter at the table.
