How to find good Venezuelan food
Venezuelan restaurants have multiplied across the US, and the core menu — arepas, cachapas, tequeños, pabellón — is simple enough that the gap between a good kitchen and an average one is obvious.

What separates a good one from a bad one
- Arepas cooked to order — Griddled then finished in the oven, crisp outside, steamy inside, split and stuffed. See our arepas guide for more.
- Pabellón criollo with balance — Shredded beef, black beans, white rice and fried sweet plantains. The beef should be saucy and well seasoned.
- Cachapas from fresh corn — Sweet corn pancakes folded over soft queso de mano. Should be tender and slightly coarse.
- Tequeños with real cheese — White cheese wrapped in dough and fried. The cheese should stretch.
- Guasacaca — Avocado and herb sauce. Fresh and tangy, on the table.
What to order
- Reina pepiada arepa — Chicken and avocado salad.
- Pabellón criollo — The national dish.
- Cachapa — With queso de mano.
- Tequeños — For the table.
- Tres leches or quesillo — For dessert.
