How to find good waffles
A good waffle is crisp on the outside and light inside, and should arrive straight from the iron. Belgian (Brussels), Liège and American waffles are different things, and the best places say which they make.
What separates a good one from a bad one
- Crisp, not limp — Made to order and served immediately.
- Yeast or buttermilk batter — Yeasted batters are lighter and more flavourful.
- Liège waffles — Dense, chewy, made from brioche dough with pearl sugar that caramelises. A specialist product.
- Deep pockets — Belgian waffles have deep grids to hold butter and syrup.
- Toppings in moderation — A great waffle needs only butter and syrup.

- Classic Belgian waffle — With butter and maple syrup.
- Liège waffle — If offered — eaten plain.
- Chicken and waffles — Savoury.
- Fruit and cream — With fresh strawberries.
