How to find good Bangladeshi food
Bangladeshi cooking is a river cuisine — fish, rice, mustard oil and greens — and it is very different from the North Indian food most South Asian restaurants in the US serve. The good places are usually small, cheap and run as a steam table.

What separates a good one from a bad one
- Fish, especially hilsa — Freshwater fish curries are the heart of the cuisine. Hilsa (ilish) in mustard sauce is the celebratory dish; a place with several fish curries is cooking Bangladeshi food in earnest.
- Mustard oil you can taste — Pungent and sharp. It is the defining fat of the cuisine and a kitchen that uses it is not toning anything down.
- Bhorta — Mashed vegetables or fish with mustard oil, onion and chilli — aubergine, potato, dried fish. Small dishes, eaten with rice, and a sign of home cooking.
- A steam table that turns over — Most Bangladeshi restaurants serve from trays. Busy at lunch with fresh trays coming out is the sign.
- Kacchi biryani — Raw marinated mutton cooked with the rice in a sealed pot. Many places only make it on certain days.
What to order
- Fish curry — Whatever fish they have — hilsa, rui or pabda.
- Bhorta platter — Several mashes with plain rice.
- Kacchi biryani — If it is on that day.
- Dal — Thin, comforting, tempered with garlic.
- Mishti doi or roshogolla — Sweet yoghurt or syrupy cheese balls to finish.

How Savor Scout looks for it
The search reads for bhorta, hilsa, kacchi and Bangladeshi in menus and reviews, because most Bangladeshi restaurants are listed as Indian and the cuisine only becomes visible in the dish names.
