How to find good bibimbap

Bibimbap is rice with seasoned vegetables, meat and an egg, mixed at the table with gochujang. The version worth seeking out is dolsot bibimbap, served in a stone bowl hot enough to crisp the rice against the sides while you eat.

What separates a good one from a bad one

  • A stone bowl that is genuinely hot — It should still be sizzling when it reaches you and crisping the rice for several minutes after. A warm bowl produces no crust and misses the point.
  • Namul prepared individually — Each vegetable — spinach, bean sprouts, fernbrake, carrot, courgette — seasoned separately. If they all taste the same they were cooked together.
  • Fernbrake on the plate — Gosari, a seasoned bracken fern, is laborious to prepare and a good indicator of a kitchen cooking properly.
  • Gochujang served on the side — So you control it. Pre-mixed bibimbap takes the decision away and is usually over-sauced.
  • Banchan that are varied and refilled — Same rule as anywhere Korean: the side dishes tell you about the kitchen before the main arrives.

What to order

  • Dolsot bibimbap — The stone bowl version. Worth the extra couple of dollars every time.
  • Yukhoe bibimbap — With raw seasoned beef and a raw yolk, if you see it.
  • Mix it immediately — Thoroughly, while the bowl is hot, then let it sit to crisp.
  • A jjigae alongside for two — Bibimbap plus a stew is the standard Korean lunch pairing.
  • Scrape the crust at the end — The nurungji at the bottom is the best part.
