How to find good boba
Boba is tea, milk and cooked tapioca pearls, and the failure mode is almost always the same: the tea is an afterthought and the drink is sugar. The good shops start from tea that would be worth drinking on its own.
What separates a good one from a bad one
- Pearls cooked within the last few hours — Tapioca has a four-hour window. Fresh pearls are chewy with a soft centre; old pearls are hard in the middle or dissolving at the edges.
- Tea brewed, not powdered — A good shop brews and discards. If the menu is all powder-based flavours, the tea is a vehicle for sugar.
- Adjustable sweetness and ice — 25%, 50%, 75%, 100%. A shop that does not offer it is not expecting you to taste the tea.
- Brown sugar syrup made in house — For brown sugar drinks specifically — it should be caramelised and slightly bitter, not just sweet.
- A queue of people who look particular about it — Boba shops live and die on repeat customers who know exactly what they want.
What to order
- Classic milk tea, 50% sugar — The baseline. If it is good here, everything else will be.
- Brown sugar boba milk — Judge the syrup.
- An unsweetened or lightly sweetened straight tea — The fastest way to find out whether they brew properly.
- Ask when the pearls were cooked — A normal question at a good shop.
- Less ice, if you want to taste it — Standard ice dilutes quickly.
