How to find good brisket
Brisket is the hardest thing in barbecue: a tough cut smoked for twelve hours or more until it is tender enough to pull apart but still holds a slice. Central Texas is the benchmark, and the best places sell out.
What separates a good one from a bad one
- Bark — A dark, peppery crust from salt, pepper and smoke.
- A visible smoke ring — A pink band beneath the bark, a sign of slow smoking.
- Moist and point — Lean (flat) and fatty (point/moist). Good places ask which you want.
- The pull test — A slice should bend over your finger and pull apart gently, not crumble or stay rubbery.
- Sold by weight — Ordered by the half pound at a counter.
What to order
- Moist brisket — From the point.
- Lean brisket — To compare.
- Burnt ends — If available.
- White bread, pickles and onion — The Texas sides.
- Arrive early — It sells out.
