How to find a good burrito
The burrito comes in very different regional forms — San Francisco Mission-style, San Diego California burrito, Sonoran — and the best ones get the tortilla, the meat and the balance right instead of just making it bigger.
What separates a good one from a bad one
- A steamed or grilled tortilla — Soft and warm, or crisped on the griddle. It should hold together.
- Meat that is well seasoned — Carne asada, carnitas or al pastor cooked properly. A burrito is only as good as its meat.
- Balance, not just size — Rice and beans in proportion, not as filler.
- Fresh salsa — Pico de gallo and a hot salsa.
- Regional style done well — California burritos with fries, Mission-style with everything, Sonoran with fewer ingredients and a thin tortilla.
What to order
- Carne asada burrito — The benchmark.
- California burrito — With fries, in San Diego.
- Mission-style super burrito — In San Francisco.
- Wet burrito — Smothered in sauce.
- Breakfast burrito — In the morning.
