How to find good Cajun and Creole food
Cajun and Creole are two Louisiana cuisines that share a pantry — the holy trinity of onion, celery and bell pepper, dark roux, rice and seafood — but differ in origin and style. A good restaurant knows which one it is cooking.
What is the difference between Cajun and Creole food?
Creole cooking grew in New Orleans from French, Spanish, African and Caribbean influences and tends to use tomatoes, butter and cream. Cajun cooking comes from the Acadian settlers of rural southwest Louisiana and is rustic, built on dark roux and pork fat, usually without tomatoes. Gumbo and jambalaya exist in both styles.
What separates a good one from a bad one
- A dark roux — Flour cooked in fat until it is the colour of chocolate. It gives gumbo and étouffée their depth and takes patience.
- Andouille and boudin — Smoked sausage and rice-and-pork sausage. A place that makes or sources real versions is connected to Louisiana.
- Seafood in season — Crawfish in spring, Gulf shrimp and oysters year round. A Louisiana kitchen cooks by the season.
- Heat with flavour — Cajun food is well seasoned, not just hot. Cayenne should be a layer, not the whole dish.
- Rice cooked right — Separate grains under gumbo and étouffée. Mushy rice ruins a good stew.
What to order
- Gumbo — Chicken and andouille, or seafood.
- Crawfish étouffée — Smothered crawfish over rice.
- Jambalaya — Red (Creole) or brown (Cajun).
- Boudin — As a snack or starter.
- Red beans and rice — Traditional on Mondays.
