How to find good jambalaya
Jambalaya is rice cooked in one pot with meat, sausage, seafood and the holy trinity. Creole (red) jambalaya has tomatoes; Cajun (brown) does not, getting its colour from browned meat.
What separates a good one from a bad one
- Rice cooked with everything — The rice absorbs the stock and flavours; it is not cooked separately and stirred in.
- Separate grains — Moist but not mushy or soupy.
- Browned meat (Cajun) — Deeply browned chicken and sausage give colour and flavour.
- Andouille — Smoked, spicy sausage.
- Seasoned through — Cayenne, thyme, bay.
What to order
- Chicken and sausage jambalaya — The classic.
- Seafood jambalaya — Creole-style.
- Red beans and rice — As a companion.
- Boudin — As a starter.
- Cornbread — On the side.
