How to find good crab
Crab is regional — blue crab on the Chesapeake and Gulf, Dungeness on the West Coast, king and snow from Alaska — and the best crab is usually the local one in season.
What separates a good one from a bad one
- Steamed or boiled fresh — Live crabs cooked to order taste far sweeter than pre-cooked, refrozen legs.
- Crab cakes that are mostly crab — Lump meat bound with as little filler as possible. Bread-heavy cakes are the commonest disappointment.
- Seasoning that fits the region — Old Bay on Chesapeake blue crabs, garlic butter on Dungeness.
- Priced by size and season — Blue crabs sold by the dozen with sizes listed is a sign of a real crab house.
- Paper on the table and mallets — A crab house set up for picking is a place that does a lot of it.
What to order
- Steamed blue crabs — By the dozen, with Old Bay, in summer.
- Jumbo lump crab cake — Broiled, not fried, to judge the crab.
- Dungeness crab — Whole, with garlic butter, on the West Coast.
- Soft-shell crab — Fried, in late spring.
- King crab legs — Split and steamed.

How Savor Scout looks for it
The search reads for local, live and in season, plus regional terms — Chesapeake, Dungeness, lump — so it can tell a real crab house from a menu with crab on it.
