How to find a good seafood boil
The seafood boil restaurant — shellfish boiled, tossed in a bag with butter and seasoning, poured onto a paper-covered table — is a cross of Louisiana boil and Vietnamese-American Cajun cooking, and it is meant to be messy, loud and shared.
What separates a good one from a bad one
- Seafood that is not overcooked — Shrimp should be snappy, crab meat sweet, crawfish tails firm. Rubbery seafood means it sat in the boil too long.
- A sauce with garlic and real butter — Viet-Cajun sauces are built on garlic, butter, lemon pepper and cayenne. A greasy, thin sauce means margarine or shortcuts.
- Heat levels that mean something — Mild, medium, hot and extra hot should actually differ.
- Fresh, live crawfish in season — Spring is crawfish season. Frozen tail meat is a different product.
- Corn, potatoes and sausage that soak up the sauce — The sides are part of the boil, not an afterthought.
What to order
- Shrimp, head on — Tastes better and sucks up the sauce.
- Snow crab or king crab legs — By the pound.
- Crawfish — In season.
- The house sauce, medium — Then adjust next time.
- Extra corn and potatoes — For the sauce.

How Savor Scout looks for it
The search reads reviews for fresh, not overcooked and garlic butter, and for whether live crawfish is available, which separates good boil spots from chains that reheat frozen seafood.
