What separates a good one from a bad one
- A short menu — Five to ten items. A truck that does one thing is usually great at it.
- A regular spot or schedule — Good trucks have loyal customers who know where to find them.
- A line of locals — Especially at lunch.
- Cooked to order — Fresh off the griddle or fryer.
- Clean and organised — A tidy truck usually means careful cooking.
What to order
- The signature item — What the truck is named after.
- Whatever is special today — If written up.
- Two things to share — If with someone.
- Drinks from the truck — Often house-made.
