How to find good Georgian food
Georgian food — from the country, not the state — is cheese bread, soup dumplings, walnuts, herbs and some of the oldest wine traditions in the world. It is meant for a table full of people and a long evening.
How do you eat khinkali?
By hand. Hold the khinkali by the twisted knot at the top, turn it upside down, bite a small hole in the side and drink the hot broth first, then eat the rest. The knot is traditionally left on the plate. Using a knife and fork lets the broth spill out, which wastes the best part.
What separates a good one from a bad one
- Khachapuri baked to order — Adjaruli khachapuri is a boat of bread filled with molten cheese, an egg and butter you stir in at the table. It should arrive bubbling.
- Khinkali pleated tightly — Large soup dumplings with many pleats and a knot on top. Thin dough, lots of broth inside.
- Walnut and herb sauces — Pkhali (vegetable and walnut pâtés) and badrijani (aubergine rolls with walnut paste) show whether the kitchen uses fresh herbs and real spice.
- Tkemali — Sour plum sauce, served with grilled meat. Fresh and tart, not jam.
- Georgian wine by the glass — Amber wines fermented in clay qvevri. A place that pours a few is taking the culture seriously.
What to order
- Adjaruli khachapuri — Stir the egg and butter in immediately.
- Khinkali — Order several per person.
- Pkhali and badrijani — As starters for the table.
- Mtsvadi — Grilled pork or lamb skewers with tkemali.
- Chakapuli or chashushuli — Herb lamb stew or spicy beef stew.

How Savor Scout looks for it
The search reads for khachapuri, khinkali and Georgian in menus and reviews, and filters out places in the state of Georgia that merely mention it — which, for this cuisine, is most of the noise.
