How to find good Hawaiian food
Hawaiian food on the mainland usually means local food — the plate lunch culture that grew from Japanese, Chinese, Filipino, Portuguese, Korean and Native Hawaiian cooking — and the best places feel like a lunch counter, not a theme restaurant.
What separates a good one from a bad one
- The plate lunch format — Two scoops of rice, one scoop of macaroni salad, and a main. That is the shape; a place that serves it is cooking the real thing.
- Mac salad that is soft and mayonnaise-heavy — Hawaiian macaroni salad is deliberately soft and simple. Done right it is the best part of the plate.
- Kalua pig with smoke — Pork traditionally cooked underground, shredded and salty. It should taste smoky, not like plain pulled pork.
- Poke made to order — Fresh, cubed fish dressed with shoyu, sesame oil, onion and limu. See our poke guide; a Hawaiian restaurant's poke is often more traditional than a poke bowl shop's.
- Spam musubi done well — Grilled, glazed Spam on rice wrapped with nori. Loved for good reasons.
What to order
- Kalua pig plate — With cabbage, rice and mac salad.
- Loco moco — Rice, a hamburger patty, a fried egg and brown gravy.
- Chicken katsu plate — Crisp cutlet with katsu sauce.
- Garlic shrimp — In the North Shore style, with lots of butter and garlic.
- Shave ice — Fine-textured, syrup-soaked, with ice cream underneath.
