How to find a good hot dog
Every American region has its own hot dog — Chicago's dragged through the garden, New York's with onions and kraut, Sonoran wrapped in bacon — and the best stands do one style perfectly.
What separates a good one from a bad one
- Natural casing with a snap — The casing should snap when you bite. Skinless dogs are softer and milder.
- A good bun, warm — Steamed poppy seed for Chicago, soft and steamed for New York, bolillo for Sonoran.
- Toppings that suit the style — Chicago: mustard, onion, relish, tomato, pickle, sport peppers, celery salt — no ketchup. A stand that knows the rules usually knows the rest.
- Grilled, griddled or steamed with intent — Char-grilled, deep-fried (rippers) and steamed are all valid. The method should be chosen, not accidental.
- Fries done right — Fresh-cut fries are a sign of a stand that cares.
What to order
- The house style — Whatever the stand is known for.
- A Chicago dog — In Chicago.
- A Sonoran dog — In Tucson or Phoenix.
- A chili dog — With onions.
- Fresh-cut fries — On the side.

How Savor Scout looks for it
The search reads for natural casing, the regional style names and fresh-cut fries, and favours specialist stands over places where hot dogs are a kids' menu item.
