How to find good hummus
Real hummus is warm, silky and rich with tahini, and in its home countries it is a meal — scooped with fresh pita, topped with whole chickpeas, olive oil, meat or beans. It barely resembles the cold tubs most people know.
What separates a good one from a bad one
- Made fresh daily — Hummus made in the morning and served the same day. Some places sell out by afternoon.
- Silky texture — Smooth, light and creamy, from well-cooked chickpeas and lots of tahini.
- Served warm or room temperature — Never fridge-cold.
- Good olive oil, paprika or sumac on top — A swirl of oil and spice, with whole chickpeas.
- Toppings as a meal — Ful, mushrooms, ground lamb, shawarma or a soft egg.
What to order
- Hummus with whole chickpeas — Hummus masabacha.
- Hummus with meat — Spiced ground lamb or shawarma on top.
- Hummus with ful — Stewed fava beans.
- Fresh pita — Plenty.
- Pickles and onion — For bites between.

How Savor Scout looks for it
The search reads for fresh, warm, silky and made daily, and favours hummusiyas and Levantine kitchens where reviewers talk about the hummus itself.
