How to find good Indonesian food
Indonesian food spans thousands of islands, but in the US it mostly means a handful of dishes from Java and Sumatra — rendang, satay, fried rice — and the difference between a good version and a tired one is enormous.

What separates a good one from a bad one
- Rendang cooked dry — Beef simmered in coconut milk and spices for hours until the liquid is gone and the meat is dark and caramelised. A soupy rendang is a curry pretending.
- Sambal made in-house — Chilli paste in several varieties — sambal terasi with shrimp paste is the benchmark. Good sambal is fresh and complex, not just hot.
- Satay over charcoal — Small skewers with a peanut sauce that has texture and a little sweetness from kecap manis.
- Kecap manis used properly — Sweet soy sauce is the characteristic flavour of nasi goreng and many grills. It should add depth, not make everything taste like dessert.
- Weekend specials — Many Indonesian restaurants are small and cook special dishes — nasi padang spreads, soto, martabak — on weekends. Worth checking for.
What to order
- Beef rendang — With rice and sambal.
- Nasi goreng — Fried rice with kecap manis, topped with a fried egg and crackers.
- Chicken satay — With peanut sauce and rice cakes.
- Gado-gado — Vegetables, tofu and egg with peanut sauce.
- Soto ayam — Turmeric chicken soup with noodles.

How Savor Scout looks for it
The search reads for rendang, nasi goreng, sambal and satay alongside Indonesian, and for reviews that describe the sambal or weekend specials, which tend to identify kitchens cooking for an Indonesian crowd.
