How to find good Jamaican food
Jerk is a cooking method, not a sauce. Done properly it means pimento wood smoke and a long slow cook, and the difference between that and jerk-flavoured grilled chicken is the whole question.
What separates a good one from a bad one
- Smoke, from a drum or a pit — Real jerk is smoked over pimento wood in a converted oil drum. A visible drum outside is the strongest signal in this cuisine.
- Scotch bonnet doing the heat — Fruity and floral before it is hot. If the heat is flat, it is cayenne.
- Oxtail that is actually gelatinous — Long-braised until the collagen has broken down. Chewy oxtail was rushed, and it takes hours that cannot be shortened.
- Rice and peas cooked in coconut milk — With a scotch bonnet dropped in whole. It should taste of coconut and thyme, not be plain rice with beans.
- Patties with a flaky, turmeric-yellow crust — The pastry is the difference. Dense, pale patties are bought in.
What to order
- Jerk chicken or pork — Ask for it with the pan drippings. Quarter chicken, hard dough bread on the side.
- Oxtail — With butter beans, rice and peas. The dish most Jamaicans would order.
- Curry goat — Bone-in, long-cooked, with a Jamaican curry powder that is its own thing.
- Ackee and saltfish — The national dish, traditionally breakfast. Eggy-looking, savoury, unlike anything else.
- Festival — Slightly sweet fried cornmeal dumplings. Order them with the jerk.
