How to find good West African food
West African food is among the fastest-growing restaurant categories in America and among the least covered. It is built on stews eaten with a starchy swallow, on smoked and dried fish for depth, and on a chilli heat that is present but rarely punishing.
What separates a good one from a bad one
- A named country — Nigerian, Ghanaian, Senegalese, Ivorian. Jollof alone is claimed by several and cooked differently by each — the rivalry is genuine and the rice is genuinely different.
- Jollof with smoke and body — Rice cooked in a tomato-pepper base until the bottom catches slightly. That faint smokiness is the point, and pale jollof has been steamed rather than cooked down.
- Real egusi texture — Ground melon seed stew should be thick and slightly grainy, with bitter leaf or spinach through it.
- Fresh swallow — Fufu, eba, amala, pounded yam. Made properly it is smooth and elastic, eaten with the hand, and not something you chew.
- Suya with yaji — Grilled skewers dusted with a groundnut and chilli spice mix. If it tastes only of chilli the yaji is thin.
What to order
- Jollof rice — With chicken or fish. Ask whether it is Nigerian or Ghanaian and let them tell you why theirs is better.
- Egusi soup with pounded yam — The dish to order if you order one thing.
- Suya — Beef skewers, as a starter or on their own.
- Thieboudienne — Senegalese fish and rice, the national dish, usually only at Senegalese places.
- Puff puff — Sweet fried dough. Order them while you wait.
