How to find good Korean BBQ
Korean barbecue is grilling meat yourself at the table, with banchan, lettuce wraps and sauces. The two big choices are all-you-can-eat or à la carte, and charcoal or gas — and they make very different meals.
Is all-you-can-eat Korean BBQ worth it?
It is good value for a hungry group that wants variety, but quality is usually lower than at à la carte restaurants: thinner cuts, more marinade, and a time limit. If you care most about the meat itself — especially beef like galbi or ribeye — à la carte usually tastes better per dollar.
What separates a good one from a bad one
- Real charcoal — Charcoal gives a smoky flavour gas grills cannot match. Many of the best places use it.
- Quality cuts — Well-marbled galbi, thick pork belly, brisket sliced paper-thin. Meat should look fresh and properly trimmed.
- Banchan that is refilled — A spread of small side dishes — kimchi, pickles, potato salad, bean sprouts — refilled on request.
- Servers who help grill — At better places staff cook or cut the meat for you at the right moment.
- Ssam ingredients — Lettuce, perilla leaves, ssamjang, garlic and chilli for wraps.
What to order
- Galbi — Marinated short ribs.
- Samgyeopsal — Thick pork belly.
- Chadol — Thin-sliced brisket.
- Doenjang jjigae — Soybean stew to go with the meat.
- Naengmyeon — Cold noodles at the end.
