How to find good oysters

Oysters are the one thing on a menu where the restaurant is not cooking anything, so everything depends on sourcing, handling and the twenty seconds between shucking and your table.

What separates a good one from a bad one

  • Named by origin, not just 'oysters' — Kumamoto, Wellfleet, Blue Point, Shigoku. A raw bar that names the beds is buying deliberately; a menu that says oysters is buying whatever.
  • Shucked to order, in view — Never pre-shucked and held. A shucking station you can see is the format that works.
  • Liquor still in the shell — The natural liquid should be present and clear. A dry oyster was shucked too early or rinsed, and rinsing removes the flavour.
  • Cut cleanly from the shell — The adductor muscle severed, no shell fragments. Sloppy shucking means a rushed or inexperienced bar.
  • High turnover — Oysters are alive until shucked. A busy raw bar is a safer raw bar, and that is a genuine food-safety point rather than a preference.

What to order

  • A half dozen from two different beds — East coast and west coast. The difference is dramatic and it is the best way in.
  • Mignonette or nothing — Shallot and vinegar, or bare. Cocktail sauce is for hiding things.
  • Happy hour, if the bar is busy — The standard way to eat oysters affordably, and quality rarely drops when volume is high.
  • Ask what came in today — A good raw bar answers immediately and specifically.
  • Grilled or roasted inland — Away from the coast, cooked preparations are frequently the better bet.
