How to find good Persian food

Persian cooking is built on rice and on sourness, and both are unusual. The rice is par-boiled then steamed so each grain separates, with a crisp golden crust at the bottom of the pot; the sourness comes from dried limes, pomegranate and unripe grapes rather than from vinegar or citrus.

What separates a good one from a bad one

  • Tahdig, and them being proud of it — The crisp rice crust from the bottom of the pot. A restaurant that offers it as a dish rather than hiding it is confident in its rice, which is the foundation of everything else.
  • Rice that is separate and fluffy — Each grain distinct, no clumping, faintly buttery. Sticky Persian rice means it was boiled rather than steamed.
  • Real saffron, used visibly — Saffron rice should be streaked, not uniformly yellow. Uniform yellow is turmeric or colouring.
  • Slow-cooked herb stews — Ghormeh sabzi takes hours of frying herbs down. If it is bright green it was rushed; it should be dark.
  • Charcoal for the kebabs — Koobideh especially. Same rule as every grill cuisine in the region.

What to order

  • Chelo kabab koobideh — Minced lamb or beef kebab with saffron rice, grilled tomato and sumac.
  • Ghormeh sabzi — Herb, kidney bean and lamb stew with dried lime. The national dish and the best test.
  • Fesenjan — Chicken in a pomegranate and walnut sauce. Sweet, sour and unlike anything else.
  • Tahdig, as a side — If it is available, order it. It usually sells out.
  • Doogh — Salted yoghurt drink with mint. An acquired taste that arrives quickly.
