How to find good Salvadoran food

Pupusas are the most under-appreciated cheap food in America: a thick hand-patted corn cake stuffed with cheese, beans or pork, griddled, and served with pickled cabbage and thin tomato salsa. Two of them is lunch for about six dollars.

What separates a good one from a bad one

  • Patted by hand, in view — You can usually see someone forming them. Hand-patted pupusas are slightly uneven and thicker at the centre; pressed ones are perfect circles.
  • Curtido that has actually fermented — The pickled cabbage slaw should be sour and slightly funky, not a fresh slaw with vinegar poured on. It is the acid that makes the whole thing work.
  • Loroco on the menu — An edible flower bud used with cheese in the best-known filling. Its presence means a kitchen sourcing properly.
  • Rice-flour pupusas offered — Pupusas de arroz are a western Salvadoran variant. Offering both is a sign of a kitchen that knows the regional difference.
  • A griddle running constantly — Pupusas are made to order. If they arrive in under two minutes they were made earlier.

What to order

  • Pupusa revuelta — Cheese, beans and chicharrón together. The standard, and the one to judge by.
  • Pupusa de queso con loroco — Cheese and loroco. Order one alongside the revuelta.
  • Yuca con chicharrón — Fried cassava with pork and curtido.
  • Panes con pollo — A stewed chicken sandwich on a crusty roll — closer to a Salvadoran torta and rarely on the English menu.
  • Horchata — Salvadoran horchata is made with morro seed, not rice, and tastes nothing like the Mexican version.
