How to find good soul food
Soul food is African American cooking with roots in the Deep South, and the best restaurants serving it are often cafeterias and family kitchens where the sides matter as much as the main.
What separates a good one from a bad one
- Greens cooked long — Collards or mustard greens simmered with smoked meat until tender, with plenty of pot liquor. Bitter, tough greens mean a rushed pot.
- Baked mac and cheese — Firm enough to cut, with a browned top and several cheeses. Soupy macaroni is a different dish.
- Fried chicken seasoned through — Crisp skin and meat that is seasoned right to the bone.
- Cornbread — Whether sweet or savoury, it should be fresh and moist, ideally from a skillet.
- Sides that change daily — A board of daily sides — black-eyed peas, candied yams, okra, cabbage — is a kitchen cooking every morning.
What to order
- Fried chicken with two or three sides — Greens and mac and cheese at minimum.
- Smothered pork chops — In onion gravy.
- Oxtails — Braised, with rice.
- Fried catfish — Cornmeal-crusted.
- Peach cobbler or sweet potato pie — For dessert.
