How to find good Armenian food
Armenian food sits where Middle Eastern, Caucasian and Mediterranean cooking meet. In the US it is concentrated in Southern California, Boston and New York, and its best restaurants are grill houses and bakeries.
What separates a good one from a bad one
- Khorovats over coals — Armenian barbecue — pork, lamb or chicken on long skewers, grilled over charcoal. Smoke is essential.
- Lahmajun baked thin — Flatbread topped with minced meat, tomato and herbs, rolled up with parsley and lemon. Crisp edges, not soggy.
- Small, handmade manti — Armenian manti are tiny, baked until crisp, and served in broth or with yoghurt. Labour-intensive and a mark of care.
- Basturma and sujuk — Cured spiced beef and sausage. A deli counter with them means a kitchen connected to the community.
- Lavash fresh — Thin, soft flatbread made daily.
What to order
- Khorovats platter — With grilled vegetables and lavash.
- Lahmajun — Several.
- Manti — With garlic yoghurt.
- Dolma — Grape leaves stuffed with rice or meat.
- Basturma — With eggs at breakfast, or on its own.
