How to find good enchiladas
Enchiladas are corn tortillas dipped in chilli sauce and rolled or folded around a filling. The sauce is the whole dish — and a kitchen that makes its own from dried chillies stands far above one that opens a can.
What separates a good one from a bad one
- Sauce made from dried chillies — Red sauce from guajillo and ancho, green from tomatillos. Fresh and deep, not tinny.
- Corn tortillas softened in oil — Briefly fried and dipped so they hold together and absorb sauce.
- Not drowned in cheese — Mexican enchiladas use crumbly fresh cheese and crema. Tex-Mex uses melted yellow cheese. Both work; drowning does not.
- Fillings that are seasoned — Shredded chicken, cheese or beef cooked with care.
- Fresh garnishes — Onion, lettuce, crema, queso fresco.
What to order
- Enchiladas verdes — Chicken with tomatillo sauce.
- Enchiladas rojas — Red chilli sauce.
- Enchiladas suizas — With cream and melted cheese.
- Enmoladas — With mole.
- Tex-Mex cheese enchiladas — With chili gravy, in Texas.
