How to find good mole
Mole is a family of complex Mexican sauces made from dried chillies, spices, seeds, nuts and sometimes chocolate, ground and cooked for hours. A kitchen that makes its own mole is a kitchen to trust.
What separates a good one from a bad one
- Made in-house — Many restaurants buy mole paste. House-made mole has more depth and is usually mentioned proudly.
- Layers of flavour — Smoky, bitter, sweet, spicy and savoury all at once. One-note sweetness means too much chocolate or sugar.
- Several moles — Oaxacan restaurants may offer negro, rojo, coloradito, amarillo and verde.
- Over chicken or turkey — The classic pairing, often with rice and tortillas.
- Sesame seeds on top — Traditional garnish.
What to order
- Mole poblano — With chicken.
- Mole negro — Oaxacan, dark and smoky.
- Enmoladas — Tortillas folded in mole.
- Mole verde — Green, with pumpkin seeds and herbs.
- Tamales with mole — If available.
