How to find good Oaxacan food
Oaxaca is the region of Mexico most celebrated for its food — seven moles, giant crisp tlayudas, mezcal — and Oaxacan restaurants in the US, especially in Los Angeles, are some of the best Mexican cooking in the country.
What separates a good one from a bad one
- More than one mole — Mole negro, rojo, coloradito, amarillo, verde. A kitchen offering several, made in-house, is serious. See our mole guide for how to judge one.
- Tlayudas crisp over charcoal — Large, thin, toasted tortillas spread with asiento (pork lard), beans, quesillo and meat, folded and grilled.
- Quesillo — Oaxacan string cheese, pulled into strands. Its presence is a good sign.
- Chapulines — Toasted grasshoppers with lime and chilli. If they are on the menu, the kitchen is cooking for Oaxacans.
- Tasajo and cecina — Thin dried beef and chilli-rubbed pork from the grill.
What to order
- Mole negro — With chicken.
- Tlayuda — With tasajo or cecina.
- Memelas — Thick tortillas with asiento, beans and cheese.
- Tamales oaxaqueños — Wrapped in banana leaf, with mole.
- Champurrado or mezcal — To finish.
