How to find good fish and chips
Fish and chips is three things done at once — batter, fish and potato — and each one fails differently. The best shops fry to order and fry nothing else in the same oil.

What separates a good one from a bad one
- Batter that shatters — Thin, crisp and golden, puffed away from the fish in places. Thick, bready batter that stays soft is a sign of a heavy mix or oil that is not hot enough.
- Fish that flakes in big pieces — Cod and haddock are classic; pollock is cheaper and fine. The fish should be moist and steaming, never grey or mushy.
- Fried to order — Fish sitting under a heat lamp loses its crispness in minutes. A short wait is a good sign.
- Chips, not fries — Thick-cut potatoes, fluffy inside. Thin shoestring fries are a different dish.
- Malt vinegar and tartar made in-house — Real malt vinegar on the table and tartar sauce with pickles you can see.
What to order
- Cod or haddock and chips — The standard.
- Mushy peas — If on offer — the proper British side.
- A piece of the day's fish — Many shops fry something local.
- Battered sausage or scallops — Potato scallops, in the Australian sense, if you see them.
- Curry sauce or gravy — The chip-shop extras.

How Savor Scout looks for it
The search reads reviews for crisp batter, fried to order and fresh fish, and steers away from places where reviewers mention soggy or greasy — the two failures that define bad fish and chips.
