How to find good fried catfish
Fried catfish is a Southern institution — catfish houses, fish fries and church suppers — and its quality rests on two things: fish that tastes clean, and a cornmeal crust that stays crisp.
What separates a good one from a bad one
- Clean-tasting fish — Farm-raised US catfish should taste mild and sweet. A muddy taste means poor-quality fish.
- Cornmeal crust, well seasoned — Crisp, light, seasoned with salt and pepper or cayenne. Heavy flour batter is a different dish.
- Fried hot and fresh — Catfish goes limp fast. Fried to order is essential.
- Hushpuppies — Crisp fried cornmeal balls, ideally with onion. A good catfish house's hushpuppies are as good as the fish.
- Slaw, pickles and tartar — The cool, sharp sides that balance the fried fish.
What to order
- Catfish fillets or whole catfish — Whole is more traditional and moister.
- Hushpuppies — Plenty.
- Coleslaw — To cut the richness.
- Fried okra or green tomatoes — As sides.
- Sweet tea — The standard.
