How to find good fish tacos
The classic fish taco comes from Baja California — battered, fried white fish in a warm corn tortilla with shredded cabbage, crema and salsa — and its quality comes down to how recently the fish left the fryer.
What separates a good one from a bad one
- Light, crisp batter — Beer batter that is airy and golden, not heavy. Fried to order.
- Firm white fish — Mahi, cod, halibut or rockfish. Flaky but holding together.
- Corn tortillas, doubled and warm — Two soft corn tortillas, heated on a griddle. Cold tortillas tear and dull everything.
- Cabbage and crema for crunch and cool — Finely shredded cabbage and a thin, tangy crema. The balance of crunch, fat and acid is the point.
- A salsa bar — Pico, salsa roja, pickled onions, lime. Self-service condiments usually mean the place is built around the tacos.
What to order
- Baja-style battered fish taco — The original.
- Grilled fish taco — Lighter, and a check of the fish quality.
- Shrimp taco — Battered or grilled.
- Ceviche tostada — If they make ceviche.
- Agua fresca — Horchata or jamaica.
