How to find good ceviche
Ceviche is raw fish cured in citrus, and almost everything about it depends on freshness and timing. Peruvian, Mexican and Ecuadorian styles are all different, and a good restaurant knows which it is making.
What separates a good one from a bad one
- Fish that tastes of the sea, not the fridge — Firm, glossy, clean-smelling. Ceviche hides nothing — stale fish is immediately obvious.
- Cured to order — Peruvian ceviche is mixed minutes before serving so the fish stays tender in the centre. Fish that sat in lime for hours turns chalky.
- Leche de tigre worth drinking — The citrus marinade, with chilli, garlic and fish juices. Many people drink it from the bowl.
- Balance of heat and acid — Ají or chilli, red onion and salt in proportion. Pure sourness is a failure.
- The right sides for the style — Sweet potato and corn in Peru, tostadas in Mexico, popcorn or chifles in Ecuador.
What to order
- Ceviche clásico — White fish, lime, ají, red onion.
- Ceviche mixto — With shrimp, octopus and squid.
- Leche de tigre — As a shot or a small glass.
- Tostada de ceviche — Mexican-style, on a crisp tortilla.
- Tiradito — Sashimi-like slices with spicy sauce, if offered.
