How to find good Haitian food
Haitian food is bold, citrusy and fried — pork marinated in sour orange, pickled cabbage with Scotch bonnet heat, black mushroom rice — and the best places are small, cash-friendly and packed on weekends.
What separates a good one from a bad one
- Griot crisp outside and tender inside — Pork shoulder marinated in sour orange and epis, braised, then fried. It is the dish to judge a Haitian kitchen by.
- Pikliz with real fire — Pickled cabbage, carrots and Scotch bonnet in vinegar. It should be sharp and hot, and it goes on everything.
- Epis — The green seasoning base of parsley, garlic, peppers and herbs. Food that tastes of it is home cooking.
- Diri djon djon — Rice cooked with black mushrooms until it turns dark grey and earthy. Special, and not every place makes it.
- Bannann peze — Twice-fried plantains, crisp and salty.
What to order
- Griot — With pikliz and plantains.
- Tassot — Fried goat or beef.
- Diri djon djon — If available.
- Legume — Vegetable and meat stew.
- Soup joumou — Pumpkin soup, especially around New Year.
