How to find good jerk chicken
Jerk is a Jamaican method, not a spice blend: meat marinated in Scotch bonnet, allspice, thyme and scallion, then smoked and grilled over pimento wood or charcoal. The smoke is what most imitations lack.
What separates a good one from a bad one
- Smoke from a drum or pit — Jerk is cooked over charcoal in oil-drum grills or over pimento wood. A smoky, charred skin is essential.
- Marinated overnight — The flavour should reach the bone.
- Scotch bonnet heat — Real jerk is spicy, with fruity heat.
- Allspice (pimento) — The warm, clove-like flavour at the centre of jerk.
- Chopped with a cleaver — Served in pieces with hard dough bread or rice and peas.
What to order
- Jerk chicken — Quarter or half, with rice and peas.
- Jerk pork — If available.
- Festival — Sweet fried dumplings.
- Hard dough bread — For the sauce.
- Ginger beer — To drink.

How Savor Scout looks for it
The search reads for jerk pit, drum, smoke and charcoal, and favours Jamaican takeaways over restaurants that use jerk as a flavour label.
