How to find good oxtail
Oxtail is one of the most expensive cheap cuts there is now, because so many cuisines love it — Jamaican stew, soul food, Korean soup, Filipino kare-kare. All of them depend on cooking it long enough.
What separates a good one from a bad one
- Falling off the bone — Oxtail needs three or four hours. If it still clings to the bone, it was rushed.
- Rich, glossy gravy — The collagen thickens the sauce naturally.
- Generous portions — Oxtail is mostly bone. A plate should have enough pieces to make a meal.
- Butter beans or broad beans — Traditional in Jamaican oxtail.
- Consistency — Many places sell out early. That is usually a good sign.
What to order
- Jamaican oxtail with rice and peas — The most popular style.
- Smothered oxtails — Soul food style, with gravy.
- Kkori gomtang — Korean oxtail soup.
- Kare-kare — Filipino oxtail in peanut sauce.
- Plantains — On the side.

How Savor Scout looks for it
The search reads for oxtail, tender and falls off the bone, and lets you specify the style, since a Korean soup and a Jamaican stew are very different meals.
