How to find good prime rib
Prime rib is a whole rib roast cooked slowly and sliced to order. Because it is roasted in one piece, it is often a weekend or night-specific special — and the best places run out.
What separates a good one from a bad one
- Even pink throughout — Slow-roasting gives edge-to-edge medium-rare without a grey band.
- A seasoned crust — Salt, pepper and herbs on the outside.
- Real jus — Pan drippings, not a salty powder.
- Fresh horseradish — Sharp, freshly grated horseradish or a creamy horseradish sauce.
- Cut sizes — Several thicknesses, from a modest cut to the bone-in end.
What to order
- Prime rib, medium-rare — The way it is meant to be served.
- The end cut — For more crust.
- Yorkshire pudding — If offered.
- Baked potato or creamed spinach — Classic sides.
- Go early on prime rib night — It sells out.
