How to find good pupusas
A pupusa is a thick corn cake stuffed with cheese, beans or pork, griddled until the outside blisters, and served with pickled cabbage and a thin tomato salsa. Two of them is a full lunch for about six dollars, which makes it one of the best value meals in America.
What separates a good one from a bad one
- Hand-patted, made to order — Slightly uneven, thicker in the middle, and taking four or five minutes to arrive. Perfectly round pupusas that arrive instantly were pressed and held.
- Curtido that is genuinely fermented — Sour and a little funky, not a fresh slaw with vinegar on it. The acid is what balances the whole thing.
- Cheese that pulls — Quesillo, stretchy and mild. If the cheese is firm and salty it is a substitute.
- Salsa roja that is thin — A loose, mildly spiced tomato sauce, ladled not dolloped. Thick chunky salsa is a different cuisine's.
- Rice-flour option — Pupusas de arroz, from western El Salvador. Offering both flours signals a kitchen that knows the regional difference.
What to order
- Revuelta — Cheese, beans and chicharrón. The standard against which everything else is judged.
- Queso con loroco — Cheese with the edible flower bud. The one to order second.
- Frijol con queso — Beans and cheese. The simplest and a good test.
- Two, not one — A single pupusa is a snack.
- Horchata — Salvadoran horchata is morro seed based and tastes nothing like the Mexican rice version.
