How to find a good thali
A thali is a complete Indian meal served on one large plate — several small bowls of dal, vegetables, curry, yoghurt, pickle and a sweet, with rice and bread — and the best are refilled until you stop them.
What is a thali?
A thali is an Indian set meal served on a large round plate with many small bowls: usually dal, two or three vegetable dishes, a curry, yoghurt or raita, pickle, a sweet, rice and flatbread. Many restaurants offer unlimited refills. The word thali means plate, and styles vary by region — Gujarati, Rajasthani and South Indian are the most common in the US.
What separates a good one from a bad one
- Variety in balance — Sweet, sour, spicy, bitter and salty all represented across the bowls.
- Refills — Traditional thali restaurants keep refilling bowls and breads.
- Fresh breads — Rotis or puris brought hot throughout the meal.
- Daily changing dishes — A thali that changes every day is a kitchen cooking fresh.
- Regional character — Gujarati thalis are lightly sweet; Rajasthani ones heavier with ghee; South Indian ones built around rice, sambar and rasam.
What to order
- The house thali — Usually the only decision.
- Gujarati thali — If offered.
- South Indian meals — Served on a banana leaf at some places.
- Extra puris — They come hot.
- Masala chaas — Spiced buttermilk.

How Savor Scout looks for it
The search reads for thali, unlimited, Gujarati and Rajasthani, and favours vegetarian specialists, where thali is the main event rather than a lunch special.
