How to find good Nigerian food
Nigerian food is soup-and-swallow cooking — rich, spicy stews eaten with a ball of pounded yam or fufu — plus party jollof and charcoal-grilled suya. The restaurants are often small, generous and busy late.
What separates a good one from a bad one
- Smoky party jollof — Rice cooked in a tomato and pepper base until it takes on smoke from the bottom of the pot. Should be deep red-orange, separate and spicy.
- Suya with yaji — Thin beef skewers rubbed with a peanut-chilli spice mix and grilled. The spice crust is everything.
- Egusi with depth — Ground melon seed soup with leafy greens, palm oil, meat and fish. Rich and layered.
- Swallow made fresh — Pounded yam, eba or amala. Smooth and stretchy, made to go with the soups.
- Pepper soup — A thin, fiery, aromatic broth with goat or fish. A sign of a kitchen cooking for Nigerians.
What to order
- Jollof rice with chicken — With fried plantain (dodo).
- Egusi with pounded yam — Eaten by hand.
- Suya — With onions and tomatoes.
- Goat pepper soup — Spicy and warming.
- Puff-puff — Fried dough balls to finish.
