How to find good Guatemalan food
Guatemalan food is Maya-rooted cooking — roasted-seed stews, tamales, black beans and thick tortillas — and the restaurants are often small bakeries and cafés that serve the community breakfast.

What separates a good one from a bad one
- Pepián with roasted spices — A national stew of chicken or beef in a sauce of toasted seeds, chillies and tomatoes. Should be smoky and complex.
- Chuchitos and paches — Guatemalan tamales: chuchitos are small and firm in corn husks; paches are made with potato. Both show home-style cooking.
- Thick handmade tortillas — Smaller and thicker than Mexican tortillas, made fresh.
- Desayuno chapín — Eggs, black beans, plantains, cream, cheese and tortillas. A good Guatemalan breakfast is a big one.
- A bakery counter — Many Guatemalan restaurants run a panadería. Fresh pan dulce is a sign of an active kitchen.
What to order
- Pepián — The national dish.
- Chuchitos — With salsa and cheese.
- Desayuno chapín — Breakfast.
- Hilachas — Shredded beef in tomato sauce.
- Rellenitos — Sweet plantain balls filled with beans and chocolate.
